Castlewood / Glebe House - Pet Nat
Glebe House, Pétillant Naturel is made using our tiny experimental plot of Rondo and Dornfelder grapes, planted in 2006. Using the méthod ancestrale, the wine is bottled before primary fermentation has finished; without the addition of secondary yeasts or sugars. In the case of this 2022 vintage, the two varieties were picked a week apart. The Rondo juice was chilled to <4deg prior to the addition of dornfelder. This emulates a ‘cold soak’ technique however without any skin contact, enhancing aromatic compounds but no bitterness or tannins. The two grape varieties were then co-fermented and bottled prior to fermentation finishing. The residual CO2 from primary fermentation acts as a natural preservative and enhances the textual character of the wine.
TASTING NOTES
A vivid ruby Rosé bursting with a cacophony of hedgerow fruits. Morello cherry on the palate with a creamy lactic mouthfeel. An extremely gentle pétillant complimenting its unique texture. Sunshine in a glass, super refreshing - great as an aperitif!
